WS yeast now available in dry form Enartis Vinquiry announced its WS yeast is now available as an active dry yeast. WS is a strain isolated from late-harvest Zinfan- del at Williams-Selyem Winery in Healds- burg, Calif., and considered one of the strongest strains from California. The unique characteristics of the yeast, which make it ideal for high-Brix juice and restart- ing stuck or sluggish fermentations, made it challenging to produce in a dry form.
