The space could also be used for a bottling line, but because Sugarloaf will be hosting a vari- ety of clients with different needs, Du Preez said he's not sure if put- ting in a fixed line is the best use of the space. The business plan calls for Sug- arloaf to be a grape-to-bottle facil- ity and not do many a la carte services like barrel storage. All of the equipment, processes and staff time is meant to support high-end winemaking, and to that end Sug- arloaf is a bit pricier than other custom-crush locations. Cost per ton depends on the client, but Du Preez said in general it will start above $2,000 per ton. Most clients also will need to start with a mini- mum of 15 tons. The per-ton cost is the only price clients pay, how- ever, as Du Preez said he doesn't want to get into the hassle of charging for every little job in the winemaking process. For 2016, Sugarloaf hosted a mix of established brands need- ing extra space and a few new startup wineries as well. The winery is permitted for up to 125,000 cases (or 1,500 to 2,000 tons of grapes), and Du Preez said there's still capacity for more clients in 2017. Buy a winery to build a road The Sugarloaf property was per- mitted for wine processing back in the late 1990s, but plans for a winery stalled. In addition to the winery, the property is permitted for 12,000 square feet of caves and up to 20 events per year. Reynoso purchased the property from Jay Jensen, owner of No- vavine, and Dean Bordigioni, owner of Annadel Estate Winery.
