The winery is permitted to produce 85,000 gal- lons per year (or 37,500 cases). The new facility was near capacity for the 2015 crush, with about 7,000 cases of Materra wines produced, and the remainder used by 10 custom-crush clients. The winery's entire capacity will likely be used for Materra wines as the brand grows. The facility currently covers about 25,000 square feet split between two main buildings: the wine fermentation and production building with 72,000 gallons of stainless-steel tank ca- pacity, and the barrel/cellar building with a capacity of 5,000 barrels that is adjacent to the tasting room and visitor facilities. A spacious covered crush pad provides ample workspace and good access for receiving and processing grapes. P&L Specialties supplied a receiving hopper and a sorting table that is avail- able for manual cluster and grape sorting, but the winery processed most of the 2015 fruit with its new Pellenc Selectiv' Winery Process M de- stemmer and automatic berry sorter. Cunat and Regalia believe this machine had a significant impact on quality for the 2015 vintage. "The sorter is easily adjustable to allow us to adapt our sorting based on grape variety, berry size and the condition of the fruit," Regalia said. A Willmes SIGMA 5,000-liter capacity pneu- matic bladder press supplied by Scott Labora- tories can press up to 4 tons of whole-cluster fruit, and a second press installed this May (a Willmes SIGMA 6) is even larger. Fermentation tanks were fabricated by Santa Rosa Stainless Steel in three main sizes: 1,100-gallon tanks to ferment 4-ton red lots, 3,300-gallon tanks to ferment 12-ton red lots, and 2,500-gallon tanks to ferment everything else. Each tank is mounted on leg stands and designed and installed with automatic pumpover capability. Pumpover pump units (one mounted under each tank's floor) were supplied by Burg- stahler Machine Works, which also supplied transfer pumps and hoses used throughout the winery. Automatic pumpovers can be pro- grammed for each individual tank using the tank control system. "We can program and do pumpovers for 22 tanks at a time, saving labor on the entire process," Regalia observed. The winery's refrigeration and temperature- control system was installed by Refrigeration Technology Inc. (RTI) and includes a 75-ton capacity chiller system with four compressors to cool the glycol circulated in fermentation tank jackets. Regalia said Materra was the first win- ery to install a Gen II Super Control system from RTI that provides programmable temperature control and pumpover control for each fermen- tation tank. Tank temperatures can be moni- tored, programmed and adjusted using control panels or PCs at the winery, or they can be monitored and adjusted remotely via smart- phone.
