Book Addresses Common Cellar Woes By Hudson Cattell Butzke, editor of the recently released "Winemaking Problems Solved," chose instead to structure this $220 book around more than 150 questions that arise during the winemaking process, then providing answers from a team of experts. Butzke, an enology professor in the Department of Food Science at Purdue University, enlisted the cooperation of 24 enologists from around the world to identify problems they have encountered and provide solu- tions to them. W The questions and answers are grouped into 11 chapters that cover broad aspects of winemaking: grape analysis; juice and must preparation; yeast fermentation; malolactic fermentation; wine clarification, stabiliza- tion and preservation; filtration; packaging and storage; equipment maintenance and troubleshooting; microbiology and sanita- tion; Brettanomyces infection and wine quality issues. Many of the contributors will be famil- iar to readers in the East and include Howard Bursen, Murli Dharmadhikari, m o Tom Payette, Sara Spayd, Todd Steiner and Karl Wilker. California representation includes Linda Bisson, K.C. Fugelsang, Gerry Ritchie, Gordon Specht and Lisa Van de Water. Sibylle Krieger-Weber, from Germany, has spoken at a number of con- ferences in the East. The book is somewhat unusual in that there is no preface by the editor, and Christian Butzke consented to an interview in preparation for this review of the book in Wine East. One of the advantages to a question-and-answer format, he said, is that readers don't have to read an entire book to get answers to their questions. Moreover, the questions they often ask are normally not found in a huge book. All of the contributors cooperated fully in coming up with the questions and solutions.
