22 WINES&VINES August 2017 PRODUCT NEWS Yeast blends for aromatic reds Scott Laboratories released two yeast blends developed in collabo- ration with the Australian Wine Re- search Institute. The blends, Alchemy III and IV, are intended for the production of New World-style aromatic red wines. Alchemy III is described as a high producer of fruit and floral aromas and can help build structure and body. Alchemy IV is designed for the production of "intense" red fruit characteristics such as cherry, raspberry, red cur- rant and pomegranate. The yeast also produces high amounts of ethyl esters that contribute to aroma longevity. scottlab.com Large-format Italian amphorae Bouchard Cooperages partnered with the Italian firm Drunk Turtle to distribute the company's concrete and "Cocciopesto" amphorae in the North American market. Coc- ciopesto is an ancient, natural ma- terial made with fragments of crushed terracotta and sand, water and small amounts of a nat- ural binding agent. According to the manufacturer, because there is so little binding agent used in the material, the amount of heavy metals in the tanks is so low they can be used without an epoxy liner. Bouchard Cooperages re- ports the Cocciopesto vessels add "minerality, complexity, freshness and brightness to wine," as well as help ensure a stable temperature. bouchardcooperages.com High-volume, discrete analyzers Unity Scientific introduced the model 450 and 600 analyzers from AMS Alliance. The SmartChem 600 offers a capacity of 200 samples and 100 reagents and can run 600 tests per hour for high-throughput labs. The SmartChem 450 can be loaded with 100 samples and 72 reagents and has a capacity of 450 tests per hour. The Oxylevel 2200 is able to mea- sure dissolved oxygen in parts per billion in a bottle through Parsec's "DOT" tech- nology that also can measure headspace oxygen. The Oxylevel 2200 provides two sensor ports to monitor cellar operation and compare dissolved oxygen levels be- fore and after bottling. The second sen- sor port also can be used for pH or conductivity (separate probes required).
