44 WINES&VINES December 2016 UNIFIED PREVIEW Blanc wines. Additionally, winemaking choices can make the difference between a crisp New Zealand-style wine with notes of fresh-cut grass and a tropical quaff with hints of pineapple and passionfruit. Asimont cor- related matching viticultural and winemak- ing components with desired wine style to arranging puzzle pieces. Another component that contributes to the sensory characteristics of wine is fermen- tation vessel, the topic of a winemaking ses- sion scheduled for Jan. 25. Winemaker Alison Crowe of Plata Wine Partners will moderate the discussion "Eggs, Uprights, Puncheons and More." Crowe and speaker Jean Hoeflinger of Alpha Omega Winery will shed light on some of the newer vessels being used for winemaking, including Perles, which change the kinetics of fermentation, and the ancient-yet-new-again amphorae once popu- lar in Croatia and Italy. Getting inspired It was in the vein of learning from the past that Asimont and the Development Committee cre- ated the Jan. 26 General Session "Adapt or Go Extinct." She told Wines & Vines, "Wednesday (general session) is focused on what happened last year, and Thursday is where we are going to be tomorrow." Asimont's vision for the morning session is a series of thought-provoking Ted talk-style lectures about meeting challenges in a chaotic marketplace. "We want people to leave with inspiration," she said. To see the full Unified Wine & Grape Symposium schedule, or to register, visit unifiedsymposium.org. As the full- time wine writer for "the gray lady," Asimov influences thousands of readers in New York and well beyond. Lise Asimont, program chair for the Unified Wine and Grape Symposium, told Wines & Vines Asimov "is a huge, huge influencer in our industry and also very well respected." She hopes attendees will leave the keynote luncheon inspired. For Asimov's part, he said that as he's watched the U.S. wine business mature, wine produc- ers have been naturally divided into two different businesses: One is comprised of mass- market wines that sell in the millions of cases, while the other is made up of wineries that sell a few thousand cases per year. "I usually think of myself as writing for this smaller segment, and at the symposium I'll have a much broader audience, so that's a challenge," he told Wines & Vines. A separate ticket is required for the keynote luncheon. Tickets are available for $50 at unifiedsymposium.org. Eric Asimov
