Sulfur dioxide remains an invaluable tool to produce quality wine, and Kallas reports on how the conventional methods of SO 2 analysis may not be providing the best analysis. Modern, clean winemaking requires some level of in- house laboratory analysis and Stacy Moskwa offers five critical steps (page 84) on how wineries can evaluate lab equipment to determine the best system for their budgets and needs. Moskwa, who is a graduate of the viticulture and enology program of Cornell University and interned at wineries in Rhode Island, New York, California and France, also offers some insight on upgrading to a fully automated system. Drawing on her widespread network of winemakers and growers throughout the Eastern and Midwest United States, Linda Jones McKee has been keeping tabs on a particularly wet vintage back East. On page 90, McKee reports on the conditions in New York, Virginia and other key wine producing regions. One highlight is that most of the grapes in North Carolina had already been picked before Hurricane Florence came ashore.
