WINEMAKING Grapes are destemmed with a Puleo 10 and then sorted with a Milani shaker table. Volk said he was quite satisfied with how much MOG the table was able to collect during the 2011 vintage. decrepit lime kilns can still be found in the area. "This is a super underappreci- ated area for growing grapes," he said. Rodolfo Callado manages the small vineyard at the winery and consults with Volk about the other vineyards. Callado was Volk's first employee at Wild Horse winery, and the two attended California Polytechnic State University together. Volk is chair of Cal Poly's Wine Market- ing and Viticulture Advisory Council and the founding president of the Paso Robles Grape Growers Association. Aim for multifaceted wines Volk now produces around 17,000 cases, a decrease from 2007, when he made 35,000 cases that he drily notes came to market "just in time for the financial collapse." Volk describes himself as an "innovating traditionalist" who aims to create multi- faceted wines. He said he employs different cultivation practices and picking sweeps to avoid "homogenous tasting" wine. Grapes are all picked by hand and de- livered to the winery in a large crush area accessible by truck near the main entrance of the winery. After weigh-in, grapes in half-ton MacroBins are dumped with a Hyster 50 forklift with a Bin Masters for- ward dumper into a Carlsen & Associates portable hopper equipped with a screw augur and variable-drive motor.
