Syrah. It is not inoculated, though yeasts are
used to start fermentation in other wines. They
include Vin 2000 for Sauvignon Blanc, CY3079
and Melody for Chardonnay and D254, UVA-
Ferm 43, BM-45 and Melody for reds. The
malolactic bacteria for Chardonnay are MBR-
31 and VP-41, while the reds undergo ML with-
out inoculation.
Sauvignon Blanc is fermented at 50°-55° F
for 30 days. "We see about 1° (Brix) drop per
day," Taylor noted.
Barrels come from Taransaud, Alain Fou-
quet, Gamba, Nadalie, Francois Freres, Boutes,
Sylvain, Seguin Moreau and Damy. The barrel-
washing device is an Aaquatools AaquaBlaster
LT.
