They are used twice each for fermenting lots. Wines spend 16 to 20 days in the tanks. B Cellars also has a 25-hec- toliter concrete "egg" for fermenting wine. All the concrete is imported from France. The Chardonnay is barrel fermented, as is the Cabernet from Beckstoffer's Dr. Crane and To-Kalon vineyards. The winery staff removes one barrelhead for fermenting the reds, but they sometimes have a cooper put it back on, which is a little trickier. The press is an Enove- neta 26HL. Pinot Noir from Dutton Ranch in Sonoma County is fermented in open-top tanks, as is TECHNICAL SPOTLIGHT Some barrels assigned to the 15,000-square-foot caves are stacked in traditional pyramid formation.
