BARRELS
Spetnagel brings in more than
500 new barrels.
All new barrels receive a bar
code sticker as well as a lot code
that denotes the cooperage and
other information such as toast or
forest. The barrel is then scanned,
and its bar code is uploaded into
the winery's Vintrace winemaking
program. For the rest of its time
at the winery, the barrel is always
associated with its bar code.
Barrels are scanned before and
after every cellar job to ensure the
right barrels have been laid down
and to update the status of the
wine and the barrels in the Vin-
trace database.
Empty barrels are washed with
AaquaTools washers powered
with a pressure washer and then
steam rinsed and given a final
rinse with ozone. The dry barrels
are stored with about 5 gallons of
a sulfite and citric solution to keep
them swollen and clean. "Luckily
we have very low incidences of
Brett," Spetnagel said. "If we ever
do, we flag the barrels for Brett
and then cull them out."
