He has scheduled and organized the harvest since 2011, when he switched to night harvesting. Q What are the terms of your agree- ment with the winemakers? CHRIS HYDE: We sign written contracts for our various blocks. We sell our grapes by the acre or by the ton, depending on the wine- maker's preferences. Q How often are the contracts modified? HYDE: We rarely modify contracts. When a block is added or removed, a simple addendum makes such a change easier. Q How does the partnership work? HYDE: We farm according to the wine- maker's wishes by communicating regularly during the growing season. We keep track of our conversations by email. Q When do winemakers pay for grapes, and how do you pay harvest workers? HYDE: Typically, we take payment for the grapes on Dec. 1, the year of the harvest. The crew harvests by hand and is paid by the ton. If the harvest is light, we pay them hourly. Q Are development costs shared with the winemaker? HYDE: We have always paid for vineyard development. Q How often do you irrigate, fertilize, compost and fumigate? HYDE: We irrigate every two weeks early in the season, very little past véraison. We start the season with three or four rounds of Stylet oil and move to sulfur later in the spring. We compost every few years. Q Do you rely on soil or weather mapping technology? HYDE: We rely on field scouting. We are think- ing about purchasing a weather station. Q Do you charge the per-acre fee if a block is infected with botrytis? HYDE: The contract contains clauses protecting wineries from having to pay for an unexpected turn in the vineyard. If there is a problem such as botrytis, the burden is always on the grower. Q Do the winemakers pay a trademark or usage fee for a vineyard designation? HYDE: For those winemakers with whom we have a long history, we do not ask for a trade- mark fee, as they helped develop the Hyde brand. Q Do you sell vineyard designations to other winemakers? HYDE: Hyde de Villaine, the venture between the Hyde family and the de Villaine family, pro- duces a vineyard-designated Cabernet Sauvi- gnon.
