WineEast Bench trial for adjusting pH • Stock solution: 16.87 grams KHCO3 with water. brought to 100ml volume • Set up four 375ml samples of wine and treat with 0, 1, 2 and 3ml of stock solution. • Mix well, then measure the pH. • Select the treatment giving the desired pH. • One milliliter stock solution in 375ml wine is equivalent to 0.45 grams KHCO3 per liter. When raising pH, be careful not to increase the pH too much. At pH 3.5 and above, spoilage bacteria of the Lactobacillus (L. Brevis and L. They also are responsible for a condition known as ropiness, where a wine's texture resembles the liquid left in a jar of fresh oysters. Fortunately, these spoilage bacteria tend to grow slowly below pH 3.5, which leaves us the preferred pH window of 3.2-3.5 when preparing our wines for MLF. If pH is already greater than 3.5, you have the option of adding acid to lower pH. Tartaric is usually the best option for suppressing pH. Avoid using citric acid, as it is degraded to acetic acid and acetoinic compounds by LAB. No matter how you slice it, acid additions are a step backwards in our effort to moderate wine acidity. The best alternative when faced with high pH is to promote a healthy, fast MLF early and treat the wine with SO2 soon after completion. Wines that are both high in pH and acid are poster children for inoculation with a strong commercial strain of MLB.
