Stacey said the sensor is a backup to prevent a pump burn- ing itself out running dry when a screen gets clogged. The system also features an air-injection sys- tem to add oxygen to the juice stream during a pumpover. After harvest, Stacey said he can use that feature to inject nitrogen for sparging tanks or gassing head- space. White fermentation tanks are each equipped with gas stones on the bottom for adding oxygen or sparging. Open-top tanks are used pri- marily for Pinot Noir and Syrah, and the winery has an automatic punchdown device by Burgstahler Machine Works of St. Helena. Sta- cey said punchdowns are great for breaking up the cap, but the data collected through VinWizard in- dicates that they don't do much for temperature management. "A punchdown does not homogenize the temperature almost at all," he said. "During cold soak—espe- cially if you're really trying to chill something down—you've got to do a pumpover." Stacey said he's also found that the temperature probes are a good way to manage partially filled tanks. VinWizard allows him to activate only certain parts of the probe for tank heating or cooling. If a tank is only partially filled, he can just activate the lower end of the probe to cool that section of the tank and not the entire volume. The VinWizard system oper- ates with pneumatic valves con- nected to the winery's compressed air supply. Such valves are more expensive but ensure the system will keep running even if the win- ery loses power. While walking through the cel- lar, Stacey also points out what's missing because of the VinWizard system: individual temperature control systems on each tank.
