Regarding vanillin, no signifi- cant differences were found in Chardonnay between LTP and HTP, whereas the MTP modality exhibited a higher level in Merlot. After 12 months of élevage, the condensed tannin concentration increased in Cabernet Sauvignon- Estate B according to tannin poten- tial from 184.4 mg/L (LTP) to 215.3 mg/L (HTP).
