After visits to Pinot country in Oregon and Burgundy, Blair scouted land for more than six months in his native Pennsylvania until he found a south-facing slope with the soil he wanted. Blair planted his first vineyard in 2007 and a few years later broke ground on his winery. Inspired by Penner-Ash Wine Cellars in Oregon, Blair designed his winery to operate at three levels to take advantage of gravity for a gentler approach to winemaking. Boxes are dumped into a PMH destemmer on the top level of the winery or straight into fermentors located in the middle tier. Must and juice is inoculated with Lallemand yeasts. Fermentation occurs in 1-ton bins or variable-capacity tanks ranging in size from 1 to 5 tons, and caps are managed with a Prospero Equipment punch-down device. White juice is fermented in barrels or tanks. All pressing is done with a 35 HL SK Group press made by Prospero.
