The sustainability of growing wine grapes on the North Coast of California
has taken some serious heat recently: first in an opinion piece in the (Santa
Rosa) Press Democrat, followed by an op-ed in July's Sonoma County Ga-
zette. Some strong words were used to chastise the wine industry, likening
it to "Big Oil" dominated by "massive corporations" "promoting and con-
trolling politics in Sacramento and Washington, D.C." Accusing the indus-
try of green washing and likening it to hog washing . . .

On a fittingly hot day in Davis,
Calif., in late July (I think the tem-
perature hit 104º F that afternoon),
I attended a session on using heat
in winemaking.
The subject of the day wasn't just
heat, but the more involved pro-
cess that's called Flash Détente in
France. We've reported on the
growth of flash in the United
States, but what struck me at the
event in Davis is that American
winemakers are now beginning to
use the process regularly rather
than just as a means to fix a prob-
lem or remove a specific taint. . . .
