ular with producers of premium
Cabernet Sauvignon. The trun-
cated shape of the tanks is de-
signed to help force the cap
down during fermentation and
rack and returns. The tanks are
available as double-wall insu-
lated tanks with pump over lines,
seed screens and other options.

Spokane Industries in Spokane,
Wash., offers its CleanSweep
system on new tanks with a
capacity of 25 tons or more.
The CleanSweep system is an-
other option for removing pom-
ace without requiring a cellar
worker to enter a tank and
shovel it out. The system em-
ploys two sweeping arms that
push the pomace out of the tank
in a gentle manner designed to
preserve wine quality.

French tank producer LeJeune
developed an inverted, trun-
cated tank that is designed to
create a cap that's more perme-
able and flexible for punch-
downs and pumpovers. During
a rack and return the cap falls
into the truncated portion of the
tank, creating a "sponge" effect
that the tank maker says releases
more free-run wine. LeJeune is

wine fermentor that it claims
provides better extraction during
pumpovers. The New York-based
supplier says its clients report
the tanks provide better extrac-
