They are used twice each for fermenting lots. Wines spend 16 to 20 days in the tanks. B Cellars also has a 25-hec- toliter concrete "egg" for fermenting wine. All the concrete is imported from France. The Chardonnay is barrel fermented, as is the Cabernet from Beckstoffer's Dr. Crane and To-Kalon vineyards.
