Wine barrel staves are machine- cut along the grain of the wood to avoid leakage. They conform to a certain thickness and minimum width. This process generates 75% waste, among which are cuts of the correct thickness that follow the grain of the wood but are too narrow. Using a technique patented by Vicard, two narrow pieces of oak can be joined to form a barrel stave. This innovation makes optimum use of each tree by minimizing losses of high-quality oak. In ceramic toasting, radiant heat is applied to wood intended for oenological use. This method preserves the qualities of the wood, toasts it evenly, uniformly and consistently, and it eliminates the risk of blistering and charring. With this method it is possible to toast the oak wood in a controlled manner and to a specific depth. A long toast of better quality is achiev- able; toasting profiles can be re- peated from one vintage to another, and wines matured with oak wood toasted with this method are per- ceived by tasters to have a better level of sweetness. The user has a wider choice of reproducible toast levels to refine the aromatic profile of the wine. d30f (dosatron) wine line winemaking input dosing pump, Wines & Tools The D30F wine line is a hydraulic, volumetric, proportional dosing pump that works without electricity. Dosatron can inject doses at wine flow rates of between 0 and 30,000 liters (7,925 gallons) per hour. It can be used to inject liquids (winemaking inputs either pure or diluted in wine) into wine during transfer or downstream of filtration systems (such as a cross flow). This system adapts to variations in flow rate. It is mobile, easy to clean and maintain and allows for con- tinuous injection with good homog- enization without injecting oxygen. Dosatron allows precise, con- tinuous dosing of winemaking in- puts at throughputs compatible with the winery's requirements. The prod- ucts (such as fining agents) are evenly distributed in the wine. Being hydraulically (rather than electrically) powered, the D30F wine line is mobile and cheaper to run than electric dosing pumps.
