Vance made the 300-liter tanks used for cider. Ulbrich purchased the 3,000-liter oval tanks from Slovenian manufacturers Jaklic, Inox Oprema and Vipava in part because he considered them the perfect size for fermenting grapes from 1.5 acres of vineyard. The tanks allow him to ferment grapes from individual vineyards and create wines that reflect their unique terroirs. When Left Foot Charley opened in The Village, Ulbrich produced 1,800 cases of wine. As of 2011, production was just under 5,000 cases. In addition, Ulbrich has four winery clients, putting overall production at 15,000 cases. Space has become an issue, and now Ulbrich is expanding into the adjacent commissary building, which has 5,000 square feet of warehouse space underneath it. It will be easy enough to move case goods through the tunnel that connects the two buildings, but the new space also will provide storage for Ulbrich���s press during the many months it is not in use. With the press in storage, the production area will be scrubbed down to make way for the bottling line.
